FIELD: food industry.
SUBSTANCE: proposed is a composition of ingredients for non-alcoholic beverages and foods, containing velvet antler hydrolysate, berries crushed to a particle size of 2 to 5 mm, sugar, and dihydroquercetin, at the following ratios of components, % wt.: velvet antler hydrolysate 20 to 30; berries 30 to 40; sugar 39.95; dihydroquercetin 0.05. The velvet antler hydrolysate is herein produced by grinding velvet antlers to a grinding degree of 100 to 120 mcm, followed by soaking the antler flour in water at the raw materials:water ratio of 1:125 to 1:160 for 2 to 3 hours while constantly stirring, followed by extracting the raw materials under the impact of ultrasonic oscillations with a frequency of 20 to 24 kHz and intensity of 13 to 15 W/cm2 for 1.5 to 2 h at a temperature of 45 to 50°C.
EFFECT: possibility of creating a functional product with a high content of biologically active substances from animal-based raw and whole berries.
