FIELD: dairy industry.
SUBSTANCE: invention relates to the dairy industry. The method for preparation of cottage cheese paste for specialized purposes includes obtaining a protein-lipid-vitamin composition based on a milk component and filler by thermal acid coagulation and mixing. Sour cream with a mass fraction of fat of 15-30% is used as a dairy component, and cherry-magnolia vine puree is used as a filler. At the same time, thermal acid coagulation is carried out after obtaining a protein-lipid-vitamin composition by disintegrating mixing of cherry-magnolia vine puree in a sour cream medium with a weight ratio of sour cream : puree = 70% : 30%, with the content of magnolia vine berries in the puree in an amount of 5.0%.
EFFECT: invention makes it possible to obtain a product with a given content of biologically active substances and adaptogenic properties.
