FIELD: food industry.
SUBSTANCE: method of preparation of a paste-like product of a specialized orientation is carried out as follows. A curd composition with fillers is obtained, prepared on the basis of kefir with a mass fraction of fat of 3.2% and a berry component with the inclusion of additional ingredients in its composition. As a berry component, Schisandra chinensis fruit is used, taken at a weight ratio of kefir: Schisandra chinensis fruit equal to 95:5, followed by fruit disintegration in a kefir medium and thermal acid coagulation of proteins in it with whey separation. As additional ingredients, wild garlic and cream paste is used in the amount of 35% to the prepared kefir and Schisandra chinensis curd mass obtained by coagulation and separation of whey. Wild garlic and cream paste are taken at a weight ratio of wild garlic: cream equal to 80:20, with a mass fraction of fat in cream of 10-30%.
EFFECT: invention provides a pasty product enriched with vitamin A, vitamin K, β-carotene and vitamin C.
