FIELD: food industry.
SUBSTANCE: invention relates to the food industry and, in particular, to methods for the production of specialized food products. The method for preparing a milk-based paste product for specialized purposes includes thermal acid coagulation of proteins in a milk dispersion medium with an organic acid solution, followed by separation of the curd mass-coagulate from whey, bringing it to 60% moisture content, mixing with a filler and homogenization. As a solution of organic acid, puree from the fruits of Schisandra chinensis is used, and wild garlic paste is used as a filler at a weight ratio of curd mass-coagulate: wild garlic paste = 70%: 30%.
EFFECT: invention makes it possible to obtain a product with antioxidant and adaptogenic properties.
