SUBSTANCE: invention relates to the bakery industry and food service, in particular, to the production of bakery products and the use of a food additive made of a mixture of wild plants, clover and sainfoin. Method for producing bread includes the stages of preparing the raw materials, sieving and passing flour through magnets, preparing dough with the addition of first-grade wheat flour, table salt, drinking water, and pressed yeast into the composition, baking the bread at 240 to 280 °C and cooling. Herewith, a food additive made of a mixture of wild plants, clover and sainfoin with particle sizes of 100 to 200 mcm is used, and the ingredients are taken in the following proportions, wt.%: first grade wheat flour 94.4, food additive made of a mixture of wild clover and sainfoin 3.0, table salt 1.6, pressed yeast 1.0.

EFFECT: possibility of raising the quality and nutritional value of the bread, with the end product containing a large amount of vitamins, dietary fibres, and phenolic compounds.
