FIELD: food products, dairy industry.
SUBSTANCE: method can be used in food industry for manufacturing of vegetable milk. The method of manufacturing vegetable milk from amaranth seeds includes seed sprouting till sprouts are 1-2 mm long by electrophysical water activation with passing constant current of 0.001-1 mA, its mineralisation and recirculating filtration with underwater passing of ultrasound having ultrasound nominal frequency 22 kHz, vibration amplitude up to 70 mkm and ultrasound power density 0.1-0.6 kW/sm2. Then grinding of seeds in homogeneous mass, mass extraction in hot water with hydromodule 1:3-1:5 and filter pressing follow. The proposed method allows increasing soluble protein content and its digestibility by digestive enzymes.
EFFECT: increase of soluble protein content in vegetable milk and improvement of its digestibility by digestive enzymes.
