FIELD: confectionery industry.
SUBSTANCE: method for the production of a food gel-like dye includes mixing of a base – glycose syrup with a food dye, mixing of the mixture to obtain a gel-like colored solution with conditional viscosity from 140 to 160 s, while a dye content in the mixture is no more than 15%. After preparation of the gel-like colored solution, its color is controlled, and it is filtered. Before mixing with glycose syrup, the food dye is additionally irradiated. As the food dye, tartrazine, quinoline yellow, sunset yellow, ponceau, carmoisine, charming red, and brilliant blue are used.
EFFECT: proposed method for the production of a gel-like dye expands the arsenal of means for a similar purpose, provides obtainment of a product with a reduced caloric content, simplifies a technology of production of a gel-like dye, allows for obtainment of a wide color scheme of gel-like dyes.
