FIELD: food-grade compositions.
SUBSTANCE: invention relates to compositions containing a colourful varnish with a low dye content as an opaque agent. Disclosed is an opaque composition for a food product containing a colour pigment, wherein the colour pigment contains a) from 0.0001 wt.% to 5 wt.% of one or more dyes, including FD&C paint varnish; and b) from 99.9999 wt.% to 95 wt.% aluminium hydroxide, wherein the composition does not contain titanium dioxide. An opaque composition for a food product is proposed, containing a colour pigment selected from the group consisting of FD&C blue colour varnish No. 1, FD&C yellow colour varnish No. 5 and combinations thereof, wherein the colour pigment is present in an amount from 0.0001 wt.% to 2 wt.% of the weight of the opacifying composition, wherein the composition contains from 98.0 wt.% to 99.9999 wt.% aluminium hydroxide, and the composition does not contain titanium dioxide. A coating composition for a food product is proposed, containing one or more layers of sugar syrup, wherein at least one layer includes said opaque composition containing one or more colorants, including FD&C paint varnish in an amount of from 0.0001 wt.% to 1.0 wt.% based on the total weight of the opaque composition, wherein the opaque composition constitutes from 0.05 wt.% to 20.0 wt.% of the coating composition. A hard coated confectionery product is proposed, containing an edible core coated with a hard coated coating containing one or more layers of sugar syrup, wherein at least one layer includes said opaque composition containing one or more dyes, including FD&C paint varnish in an amount of 0.0001 wt.% to 2.0 wt.% based on the total weight of the opaque composition, wherein the opaque composition constitutes from 5.0 wt.% to 20.0 wt.% of the solid coated coating composition. A method of coating an edible core of a food product with a hard coated coating is proposed, comprising: a) applying a first coating composition containing said opacifying composition dispersed in sugar syrup in an amount of from 1 wt.% to 30 wt.%, based on the total weight of the first coating composition for providing at least one layer of hard coated coating; and b) applying a second coating composition containing sugar syrup, but not containing the opaque composition, to provide at least one additional layer of hard coated coating.
EFFECT: invention provides compositions that provide the required whiteness and opacity, and also provide a pre-coat or whiteness/opacity to any layer, including the colour layer, to improve coatings containing dyes, while the opaque compositions can be used in confectionery products, food products, pet animal feed, soft or hard coated coatings or edible paint.
