SUBSTANCE: invention relates to the fruit and vegetable canning industry. A method is proposed for obtaining a puree-like dessert based on strawberries, which involves the acceptance, sorting of fresh strawberries, washing dried apricots and dried apples, peeled without a seed chamber, composing a mixture of strawberries with white sugar or a mixture of strawberries with white sugar with the addition of dried apples or apricot dried apricots, infusion of the mixture for 2.5-4.0 hours at a temperature of 18±2°C, stirring for 2-3 minutes, mechanoacoustic processing and sterilization of the resulting mixture in an apparatus equipped with a rotary-dispersing device that creates acoustic field with an exposure intensity of 100-500 W/kg for 15-30 minutes at a temperature of 65-70°C, followed by sterilization at a temperature of 95-97°C for 20-60 s, hot filling into glass packaging, corking, cooling to a temperature not exceeding 25°C, storage, and the following ratio of initial components is used, taking into account losses, kg/1000 kg of the finished product: fresh strawberries - 1000, white sugar - 142.9, or fresh strawberries - 941.9, dried apples - 112.7, white sugar - 112.2, or fresh strawberries - 955.1, dried apricots - 84.5, white sugar - 91.8.

EFFECT: invention provides reduction of technological operations and duration of production of desserts with original organoleptic characteristics.
