FIELD: food industry.
SUBSTANCE: invention is intended for the use in the production of food products or drinks. Sodium-potassium acetate powder used for food products or drinks contains at least 10 wt.% of acetate particles with coating, having following characteristics: they contain one or several carrier particles containing at least 80 wt.% of a sodium-acetate component selected from sodium acetate hydrates, anhydrous sodium acetate, and combinations thereof; they contain a coating layer applied to the mentioned one or several carrier particles and containing at least 60 wt.% of potassium acetate; they contain potassium and sodium at a molar ratio from 0.4:1 to 5:1; and a particle size is in the range from 40 to 1000 mcm. A method for the production of sodium-potassium acetate powder provides application of coating containing at least 30 wt.% of potassium acetate, in a fluidized layer, to carrier particles containing at least 80 wt.% of a sodium-acetate complex.
EFFECT: proposed acetate product in the form of particles with coating is stable regardless hygroscopicity, potassium acetate, which is in a coating layer directly contacting surrounding atmosphere, is easily treated.
