FIELD: food industry.

SUBSTANCE: invention relates to stable lactate powder. A product in the form of lactate powder particles for the preparation of a food product is proposed, containing at least 10 wt.% of lactate powder with coating, having following characteristics: they contain one or more carrier particles containing at least 80 wt.% of a calcium-lactate component selected from calcium lactate hydrates, anhydrous calcium lactate, and combinations thereof; they contain a coating layer, which covers one or more carrier particles, wherein the specified coating layer contains at least 60 wt.% of sodium lactate; they contain sodium and calcium at a molar ratio from 2.1:1 to 5:1, and a particle size is in the range from 120 to 1200 mcm, wherein the food product is a food product or a drink. A method for the preparation of a food product is proposed, wherein the specified method includes introduction into the specified product of the specified product in the form of lactate powder particles at a concentration from 0.1% to 10% of the weight of the food product. A method for the preparation of a drink is proposed, wherein the specified method includes introduction into the specified drink of the specified product in the form of lactate powder particles at a concentration from 0.1% to 10% of the weight of the drink. A method for the production of the specified product in the form of lactate powder particles for the preparation of a food product is also proposed, wherein the specified method includes: preparation of a fluidized layer of carrier particles containing at least 80 wt.% of a calcium-containing component selected from calcium lactate hydrates, anhydrous calcium lactate, and combinations thereof; covering of carrier particles by spraying on the fluidized layer of water-based liquid containing at least 30 wt.% of sodium lactate, and drying of carrier particles covered by spraying to obtain a coating layer, wherein the specified coating layer contains at least 60 wt.% of sodium lactate.

EFFECT: invention allows for obtainment of lactate powder, which is simple in handling, bulk, and which has high stability, which is suitable for the preparation of food products and drinks.
