FIELD: food industry.
SUBSTANCE: invention relates to a dietary and functional food product based on sprouted grains and a method of its preparation. The proposed method of preparing a food product in the form of a smoothie involves loading a mixture consisting of wt.%: 12 of pre-sprouted wheat grains, 32 of apples, pears, peach, 56 of orange juice, apple juice, 56 of water, or 5 of pre-sprouted oats, 45 of apples, plums, 5 of pine nuts, 45 of orange juice, water or 23 of pre-sprouted chickpea grains, 20 of raspberries, orange, 57 of apricot juice, green tea water extract, or 20 of pre-sprouted flax grains, 40 of apples, carrots, celery, 40 of orange juice, water, in rotary-pulsation type disperser. In the specified dispersant, the mixture is subjected to hydrodynamic cavitation dispersion for 30–40 minutes, resulting in fine crushing, intensive mixing and pasteurization of the product. The resulting mixture is packaged in sterile packaging and sealed. A food product in the form of a smoothie is also proposed.
EFFECT: invention is aimed at obtaining a product with a natural composition rich in useful macro-microelements, which, when consuming a food product, are easily absorbed by the human body, as well as ensuring the safety of useful substances in the product.
