SUBSTANCE: method for producing Kimchi is described, including: salting and seasoning Kimchi cabbage and fermenting them with Leuconostoc mesenteroides KCTC13043BP and Lactobacillus plantarum KCTC11403BP, where Kimchi cabbage is a Kimchi cabbage with a high content of lycopene. A composition for alleviating gastric cancer is also described, including an alcoholic extract of Kimchi obtained by this method, and the use of Kimchi for alleviating gastric cancer.
EFFECT: invention makes it possible to use the resulting product for alleviating gastric cancer.
