FIELD: food industry.
SUBSTANCE: technology of cereal production and oatmeal production. Method for processing oats into cereal is proposed, including its cleaning, steaming, drying, cooling and peeling, where, in order to increase the yield of finished products, oats are cooled in a circulating air layer until the moisture content of oats reaches 8-10%, and peeling is carried out in an air chamber by oncoming air flows with a temperature of 26-28°C coming from the holes of the turns of the feeding and mixing auger and from the holes in the inner cavity of the chamber at the air pressure of 0.2-0.5 MPa.
EFFECT: invention makes it possible to increase the efficiency of peeling and the yield of finished cereal products.
