SUBSTANCE: mill roller for use in a pair of such rollers, a pair of mill rollers, a product processing plant, a method for operating such a plant, a sensor cap and a set for protecting the mill roller sensor. A mill roller 1 for use in a pair of mill rollers, in particular in a pair of grain crusher rollers, comprises at least one sensor 2 for detecting measured values indicative of the state of the mill roller, at least one data transmitter 3 for non-contact transmission of measured values of at least one sensor 2 into the data receiver, the sensor 2 being located in the receiving opening 1a of the roller 1 of the mill. At the same time, the sensor 2 is protected in the receiving hole 1a by means of a cap 4 made of ceramic material and attached to the outer end of the receiving hole 1a by means of a fastening device 5, which is a ring made of metallic material and having a geometric shape that ensures fixation of the fastening cap devices 4. The fastening device 5 is also fixed in the receiving hole 1a. A pair of rollers of the mill, in particular a pair of rollers for crushing grain, contains a pair of rollers, at least one of which is made in accordance with the above roller. The product processing plant, in particular a grain mill, comprises at least one of the aforementioned pair of mill rollers. The method for operating the plant for processing the product includes the step of determining the state of the above-mentioned mill roller 1 using a sensor 2 placed in the mill roller 1. A sensor cap 4 made of a ceramic material and configured or adapted to be used as a cap 4 for protecting the sensor 2 in the receiving hole 1a of the aforementioned mill roller 1. The set for protecting the sensor in the receiving opening consists of the aforementioned sensor cap 4 and a fastening device 5, in particular a fastening device 5, consisting of a ring made of a metallic material.
EFFECT: improving of the quality of measuring the state of the roller surface.
