SUBSTANCE: liquid acidic food composition contains at least one phycocyanin extracted from algae (or microalgae) of order Cyanidiales, resistant to acidic pH, with content of 2.5 to 2500 mg/l, and at least one inorganic or organic acid selected from coal, phosphoric, hydrochloric, sulfuric, perchloric, sulphonic, nitric, citric, lactic, malic, tartaric and succinic acids. Composition has pH 4 or less. Phycocyanin is a phycobiliprotein, the apoprotein of which contains a protein with SEQ ID NO: 1 or protein sequence, having at least 83 % identity of SEQ ID NO: 1, or SEQ ID NO: 2 or a protein sequence having at least 82 % identity of SEQ ID NO: 2. Carbonated or non-carbonated beverage contains said liquid acid composition. Solid acidic food composition contains at least one phycocyanin extracted from algae (or microalgae) of order Cyanidiales, resistant to acidic pH, with content of 0.01 to 10 mg/g, and at least one inorganic or organic acid selected from coal, phosphoric, hydrochloric, sulfuric, perchloric, sulphonic, nitric, citric, lactic, malic, tartaric and succinic acids. Composition has pH 4 or less.
EFFECT: group of inventions provides a product which has more stable coloration at acidic pH over time.
