SUBSTANCE: method is proposed for inhibiting the isomerization of a reducing saccharide in an aqueous solution during heat treatment to sterilize an aqueous saccharide solution, which includes the step of acidifying an aqueous saccharide solution prior to heat treatment by adding at least one acid to an aqueous saccharide solution to pH from 1 to 6. Heat treatment involves heating an aqueous solution of saccharide to a temperature in the range of 115 to 150°C and maintaining this temperature for 60 minutes, or autoclaving an aqueous saccharide solution at 121.1°C for 15 to 30 minutes, or heating the aqueous solution to a temperature in the range of 130 to 150°C and maintaining this temperature for up to 5 minutes, or exposing the aqueous solution to a temperature in the range of 71.5 to 74°C for a period of 15 to 30 seconds. The reducing saccharide is lactose.
EFFECT: invention provides high efficiency in implementation.
