FIELD: food industry.
SUBSTANCE: invention can be used for production of apple chips. Proposed method involves mixing homogeneous apple paste of small-fruited apple trees with sugar until it is completely dissolved, the mass is rolled into a thin layer with thickness of 8 mm in a rolling plant through horizontal rolls, and a square billet is formed with the help of a roll knife. Then it is dried in microwave unit with power of 950 W with further drying in convective dryer at temperature of 45–50 °C till moisture content is 7–8%. Then finished products are delivered for cooling, prepacking and packing. Initial components are taken in the following ratio, wt.%: homogeneous apple paste—80–90, sugar—10–20.
EFFECT: invention is aimed at obtaining apple chips with high content of biologically active substances and expanding the range of food concentrates, as well as improving the quality of finished products.
