FIELD: food industry.
SUBSTANCE: meat-containing chopped products in the form of cutlets are proposed, which are obtained from fatty pork, onion, chicken eggs, cooking salt, drinking water, ground black pepper, soy concentrate, wheat fibre and elk meat in the following ratio of initial components, wt.%: elk meat 45.8; fatty pork 18.5; onion 2.0; chicken egg 1.2; cooking salt 1.2; drinking water 23.0; ground black pepper 0.3; soy concentrate 3.0; wheat fibre 5.0.
EFFECT: increase in nutritional value, organoleptic and functional-technological properties of the obtained meat-containing chopped semi-finished product.
