FIELD: food industry.
SUBSTANCE: invention relates to food industry. Raw materials are washed with water, milled and subjected to autoproteolysis at a temperature of 45-50°C under continuous stirring conditions during 45-60 minutes. Then one separates shell particles with subsequent enzymes inactivation with simultaneous pasteurisation of the ready product that is packed and frozen. Raw materials are represented by humpy shrimp (Pandalus goniurus) and/or northern shrimp (Pandalus borealis).
EFFECT: invention allows to increase the ready product yield and reduce its preparation time.
