FIELD: food industry.
SUBSTANCE: invention refers to fish industry. The composition of biologically active substances of prawn loricate wastes includes (in terms of the dry loricate substance weight): fats and astaxanthin carotenoid - 10-18%, chitin/chitosan - 21.4-43%, proteins - 36-42%, remainders of lorica mineral components- 5-10.6%, water - 6-8%. The composition is applied as a food product or fodder for different deceases therapy, for contaminated objects detoxication, as a substance enhancing soil fertility and raw material for production of chitin/chitosan substances and carotenoids. According to the method the cephalothorax is separated from the abdomen of pre-peeling development stage shellfishes during the first 4 hours after fishing. The loricate wastes are frozen in a saturated solution of culinary salt at a temperature of -2°C, glased by way of dipping in cold fresh water for 10 minutes and stored at a temperature of -5 - -20°C till processing. The raw material is frozen, dried, pressed, stored at a processing enterprise, before commercialisation the raw material is milled and packed.
EFFECT: invention allows to reduce raw material loss.
