SUBSTANCE: invention refers to fish industry. The method envisages fishing prawn in the development stage preceding peeling. The cephalothorax is separated from the abdomen during the first 4 hours after fishing. Cephalothorax raw material is frozen in a saturated salt solution at a temperature of -2°C and glased by way of dipping in cold fresh water for 10 minutes. Then the raw material is delivered to a processing factory, temperature during transportation being from -2 to -10°C, rapidly unfrozen by way of dipping in fresh water and dried at a temperature from 107 to 110°C till moisture content is 6-8%. The semi-finished product is pressed, stored at a temperature from 0 to +5°C, before commercialisation it is milled till the particle size is no more than 0.5 mm and packed.
EFFECT: invention allows to produce biologically active substances of production wastes.
