SUBSTANCE: invention can be used in the dairy industry. The method of enriching milk with vitamin B — nicotinic acid is its fermentation with lactobacilli Lactobacillus acidophilus B-2213 or Lactobacillus salivarius B-2214 at a dose of inoculum of 5–15% by volume for 6–24 hours at a temperature of 30–40 °C.
EFFECT: invention makes it possible to increase the content of nicotinic acid in fermented milk and obtain a functional product without adding any additional components.
