SUBSTANCE: invention can be used to obtain food additives from plant materials, which are an additional source of flavonoids. The method for producing a food additive from plant materials includes the stages of grinding dry plant materials, extraction, filtering, concentrating and drying the extract. Dry grass of meadowsweet or angustifolia willowherb is ground, followed by extraction in the steam-gas cavitation mode. Demineralized water is used as an extractant at a temperature of 40-50°C and extraction module 1 kg÷(8-10) L. Extraction is carried out for 60-80 minutes. After filtering and concentration, the extract is dried in a vacuum contact infrared chamber until the final product moisture content is no more than 5%.

EFFECT: invention makes it possible to obtain food additives based on dry plant extracts with a high content of biologically active substances, in particular flavonoids.
