SUBSTANCE: method for producing volatile organic acids includes the stages of: a) anaerobic fermentation of biomass in an aqueous fermentation medium to produce fermented wort, b) extraction of fermented syrup from fermented wort, c) concentration of fermented syrup by evaporation and d) extraction of volatile organic acids from concentrated fermented syrup, wherein said fermented syrup is aerated to step c) concentrating the fermented syrup by evaporation.
EFFECT: extracting volatile organic acids with high yield, limiting their losses.
