FIELD: food industry.

SUBSTANCE: invention relates to food industry, in particular, to beverages stabilisation during storage. The method for sorbic acid sedimentation reduction during the process of stable preserved syrup production and storage envisages production of microemulsion of sorbic acid, non-aqueous solvent and a surfactant in water. The syrup ingredients are added into a large volume of liquid; the microemulsion is added into liquid. According to another aspect, a sorbic acid compound is dissolved in the syrup ingredient based on oil. The syrup ingredients are added into a large volume of liquid; the syrup ingredient based on oil which contains sorbic acid compound is added into the liquid. According to the other aspect, one describes a method for reduction of sorbic acid sedimentation in the process of stable preserved syrup production and storage. Sorbic acid compound and polysorbate are dissolved in water. One adds the syrup ingredients into a large volume of liquid; the produced liquid containing sorbic acid compound is added into the liquid.

EFFECT: proposed invention ensures obtainment of transparent beverages preserving their transparency in the process of storage due to sorbic acid sedimentation prevention.
