FIELD: food industry.
SUBSTANCE: following is proposed: a method of producing individual food pieces with a non-stick coating, which includes applying the composition to the surface of the food pieces, drying them to obtain dried food pieces having at least a partial coating, in which the soluble solid component has a degree of crystallinity from 15 to 60%, wherein the crystallinity of at least 95% coverage is provided by erythritol, wherein the moisture content of the said dried pieces is from 2 to 3.5% by weight, and cooling of the dried pieces. Moreover, the composition for application to the surface of pieces of food contains a soluble solid component containing soluble solids, including erythritol, in an amount from 50 to 90% by weight of soluble solids, based on the weight of dry matter, and a water-soluble carbohydrate having an average dextrose equivalent from 4 to 30, in an amount of 2 to 40% soluble solids, equivalent to dry weight, and water.
EFFECT: invention ensures the production of pieces of food with a low-calorie coating.
