SUBSTANCE: invention relates to a composition in the form of a powder for preparing a nutritious product. The powder for obtaining a nutritional product contains a phosphate salt, at least one glycine or a functional derivative thereof, at least one N-acetylcysteine, L-cysteine or a functional derivative thereof, vitamin E, vitamin C, vitamin B2 and zinc. Moreover, the powder has at least one characteristic selected from the group consisting of the following: (i) amino acids are present in the powder in an amount at least partially including an amino acid in a form selected from the group consisting of free form, dipeptides, tripeptides and their mixtures, and (ii) the powder is substantially free of enzymes and antibodies. The liquid nutritional product contains the above powder and an ingredient selected from the group consisting of an acid component, protein and mixtures thereof. A method of reducing or preventing protein denaturation and protein coagulation caused by dissolving a powder in a liquid containing an ingredient selected from the group consisting of a protein or a mixture of a protein and an acid component includes a step selected from the group consisting of (i) dry mixing a phosphate salt with an amino acid and (ii) drying an aqueous solution containing a phosphate salt and an amino acid, wherein the powder contains a phosphate salt, at least one glycine or a functional derivative thereof, at least one N-acetylcysteine, L-cysteine or a functional derivative thereof, vitamin E, vitamin C, vitamin B2 and zinc, and has at least one characteristic selected from the group consisting of the following: (i) amino acids are present in the powder in an amount at least partially comprising the amino acid in a form selected from the group, consisting of free form, dipeptides, tripeptides and mixtures thereof, and (ii) the powder is substantially free of enzymes and antibodies.
EFFECT: invention makes it possible to minimize or prevent protein denaturation and protein coagulation when dissolving the powder in a liquid.
