FIELD: food industry.
SUBSTANCE: invention relates to food industry and may be used for production of complex mixture of red bilberries and cranberries press cake for enriched fermented milk products, in particular, yoghurt. Method for production of a dry functional complex mixture for fermented milk products is as follows: dry mixture of red bilberries and cranberries press cake is obtained separately for each type of berries. Berry press cake is laid in a uniform layer on baking sheets, dried by convective method at temperature of 45–50 °C for 10 hours to moisture content of not more than 10 %. Dried press cake of berries is cooled to temperature of 18–20 °C. It is milled to particle size of not more than 0.5 mm and sieved. Press cake is mixed with stabilizing food additives during 15 minutes. Mixture is passed through a hopper equipped with a UV-radiation device and packed into food containers.
EFFECT: present method allows to produce a dry functional complex mixture of cranberries and red red bilberries press cake, which has high content of food fibers, stable functional and technological properties, can be stored for a long time without losing its properties.
