FIELD: food industry.
SUBSTANCE: invention relates to an edible chewable product for oral use by the children. The edible chewable product contains an expanded matrix of pre-gelatinized cereal flour and a plasticizer. The edible chewing product has a moisture content of 12–14 wt.% or a water activity of not more than 0.6. Wherein the children are infants of six months of age or toddlers, and the edible chewable product is of a size that allows the children to hold the edible chewable product and place the edible chewable product in the mouth. The edible chewing product has at least one characteristic selected from the group consisting of an outer diameter from 15 mm to 20 mm, a length from 50 mm to 100 mm and a weight from 10 g to 15 g. Moreover, to dissolve the edible chewing product it is required more than five (5) minutes. A method of producing an edible chewing product includes creating a dry mixture containing pre-gelatinized flour from grain crops, dosing the dry mixture into an extruder with an extrusion head, adding a plasticizer to the dry mixture to obtain dough, creating conditions for the formation of active crystallization centres inside the dough by exposure to shear stresses and temperature in the extruder section adjacent to the extrusion head to produce heated and kneaded dough and directing the heated and kneaded dough through the opening of the extrusion head.
EFFECT: invention makes it possible to obtain an edible chewable product that provides the children with support during teething, relieves pain during teething, and also helps to calm teething children.
