FIELD: food industry.

SUBSTANCE: method of producing low molecular weight chitosan. The proposed method of producing low molecular weight chitosan by enzymatic hydrolysis of chitosan in aqueous solutions of organic acids involves mixing it with an enzyme previously dissolved in water. Enzymatic hydrolysis is carried out with constant stirring of the solution at a temperature of 40–45 °C for 0.5–1.5 hours, then the temperature is raised to 50–55 °C for 5–9 hours, after which the temperature is raised to 90–95 °C for 0.5–1.5 hours to completely inactivate the action of enzymes. Chitosanase, or collagenase, or the enzyme preparation pancreatin, or pepsin, or a mixture thereof is used as an enzyme in the following ratio of components, wt.%: 0.5–8 of chitosan; 0.5–6 of organic acid; 0.03–3 of enzyme; the rest is water. Preferably, acetic, or lactic, or succinic, or malic acid, or a mixture thereof, is used as an organic acid.

EFFECT: simplifying and accelerating the synthesis process.
