FIELD: public catering.
SUBSTANCE: method of making a product from a bread flatbread with a filling from semi-finished products includes the following steps: a thin sheet of flatbread, in the form of a rectangular Armenian lavash, is placed on the grill grate from its lower grooved surface, the filling is laid out in the centre of the bread flatbread sheet, a small amount of sauce is applied pointwise in several places on the filling. In the process of placing the filling and sauce on a sheet of bread, the upper and lower grooved surfaces of the grill are heated for 3 seconds to a temperature of 200-300 °C. The side flaps of the grill grate, sequentially from left to right, wrap one after the other both side edges of the flatbread sheet inward, placing them overlapping, covering the filling and sauce, while the filling inside the wrapped flatbread sheet is not separated by layers of the flatbread sheet into the cavity, and the wrapped flatbread sheet itself is inside under the side flaps of the grille. The lower corrugated surface of the grill is raised to a height of half the thickness of the intended finished product, a wrapped sheet of bread with filling and sauce is pressed simultaneously from above and below for no more than 10 seconds, respectively, with the upper and lower corrugated surface of the grill. Over the next 5-15 seconds, glue the edges of the sheet of wrapped bread tortilla from the ends, touching them with the heated upper pressing element of the grill, located at both ends of the upper surface of the grill, forming a finished product with filling and sauce inside. The upper surface of the grill is raised and the finished baked product is transferred to the transport device to the consumer.
EFFECT: reduced time for manufacturing the finished product, improved quality of the finished product, and improved taste.
