FIELD: biotechnology.
SUBSTANCE: disclosed is a method of producing a fermented milk product, comprising (a) providing a milk base, and (b) converting the milk base into a fermented milk product having pH of 3.0 to 5.0, wherein before, during or after any of steps (a)-(b), a bacterial peptide exhibiting enzymatic activity of beta-galactosidase, having optimum activity at pH from 4.0 to below pH 6.7, measured at 37 °C is added. Also disclosed is a fermented milk product obtained using said method and containing said bacterial peptide, and use of said bacterial peptide as lactase in a method for producing a fermented milk product.
EFFECT: invention enables to obtain a fermented milk product when used at any stage of the method of beta-galactosidases which are stable with relatively high activity at low pH values.
