Disclosed is garlic paste, which is a preserved garlic paste using salt, mixed with the garlic mass for 60 minutes, while taking garlic, salt, adding khmeli-suneli, paprika and smoked paprika in the following initial ratio, wt.%: garlic 70.13; salt 23.25; khmeli-suneli 0.62; paprika 3; smoked paprika 3. Also disclosed is garlic paste, which is a preserved garlic paste using salt mixed with the garlic mass for 60 minutes, while taking garlic, salt, adding dried lemon peel and lemon powder in the following initial ratio, wt.%: garlic 77.5; salt 17.5; dried lemon peel 2.5; lemon powder 2.5.

EFFECT: invention is aimed at preparation of preserved garlic paste with preservation of useful properties of garlic, at the same time expansion of range of preserved garlic pastes is provided, without the use of chemicals during preservation and purification, as well as improved organoleptic properties of the obtained product.
