FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to methods for complex processing of rapeseed cake. Method of producing a complex of polysaccharides with co-extracted protein from rapeseed cake includes grinding rapeseed cake to particle size of not more than 200 mcm, preparation of a suspension of milled rapeseed cake in acidified water with hydromodule of 1:14–15, brought to pH 3.5–4.0 using 20% solution of H2SO4, followed by extraction for 30 minutes with constant stirring 180 min-1 and temperature of 40 °C. Extract is separated from the cake by centrifugation at 4,000 min-1 for 20 minutes, followed by precipitation of the obtained extract with a double volume of 75–80% ethanol solution. Then centrifuged at 4,000 min-1 for 20 minutes and the precipitate is dried in a vacuum drying cabinet at temperature of 50 °C and pressure of 100 Pa to residual moisture of sediment of 6–8% and ash content of 5–5.5%. Obtained sediment contains a complex of rapeseed cake polysaccharides in amount of 6–6.5% of the rapeseed cake weight and the co-extracted protein in amount of 7.6–7.9 of the rapeseed cake weight.
EFFECT: invention enables to obtain a polysaccharide complex with an extract yield of 6–6.5% of the weight of the raw material with coextracted protein in amount of 7.6–7.9% of the weight of rapeseed cake.
