FIELD: food industry.
SUBSTANCE: following is proposed: a reindeer by-product pate which is made from fresh onions, fresh table carrots, a mixture of spices for the pate, table salt, granulated sugar, reindeer liver and heart, rendered reindeer fat, Abioiodoselen food ingredient and water, with the following ratio of initial components, wt.%: 25.7–41.5 of reindeer liver; 25.7–41.5 of reindeer heart; 11.9 of rendered reindeer fat; 5.5 of fresh onion; 5.5 of fresh table carrots; 1.3 of spice mixture for pate; 0.4 of table salt; 0.2 of granulated sugar; 0.006 of Abioiodoselenium; the rest is water.
EFFECT: invention ensures the enrichment of reindeer by-product pate with iodine and selenium, increasing its nutritional value, improving the quality characteristics of the product, including organoleptic properties, as well as expanding the range of pates.
