FIELD: food industry; biotechnology.

SUBSTANCE: invention represents a method of producing a food mineral-protein additive (versions). In the method of producing the food additive, the raw materials used are fabrics and/or Anadara flaps, wherein uncut molluscs sampled from natural habitat are washed in running water, heated until flaps open, and after cooling, tissues and/or flaps are separated and dried to constant weight in a drying cabinet at 105±5 °C. Dried tissues and/or flaps are thoroughly crushed and sieved through a sieve with mesh size of not more than 280 mcm to obtain powders of homogeneous consistency. Fats are removed from the powder obtained from Anadara tissues by dry extraction in hexane heated to 60 °C at ratio of 1:5. Duration of extraction is 2 hours. After extraction, the powder is filtered from the fabrics and held over hot water vapor until the hexane odor is removed, and then dried again at 105±5 °C. Produced product is enriched with macro- and microelements, with fat content—less than 0.03%, protein—not less than 75%. Powder from Anadara tissues purified from lipid impurities can be used both in pure form and as additives, as well as combined with the powder from Anadara flaps in ratio of 9:1.

EFFECT: invention is aimed at obtaining from Anadara food additives of a mineral-protein composition of high biological value, intended for enrichment of food products with minerals, mainly, K, Na, Ca, Mg, Zn, Fe, Mn, Cu, Mo, Ni, Cr, Co, Cl, P, S, I, Se, F, Al, B, Si, in combination with high-molecular proteins.
