FIELD: food industry.
SUBSTANCE: method of producing powdered collagen material of food quality from mixed collagen-containing raw materials involves preparation of two kinds of raw materials. Pork skins with fat content of 25% per dry substance are washed in water to remove impurities and preserving salts. Then they are crushed to size of 15–20 mm and additionally washed in cold running water for 1–2 hours. Cattle hide split with fat content of 2.8% per dry substance is prepared by double washing with water and the washed scars split of cattle skins is treated with 0.5% hydrochloric acid until pH of the raw material is 6.0–7.5. Then, cattle hide split is crushed to size of 15–20 mm and mixed with prepared raw material of pork skins. Mixed raw material is heated in a heat exchanger or a steamer to temperature of 60 °C for 7.5 minutes and dried with hot air at temperature of 150 °C for not more than 1 minute. Dried mixed raw material is ground in an air-grading mill at temperature not higher than 70 °C to obtain a powdered food-grade collagen material with fineness of up to 100 mesh and moisture content of 6%.
EFFECT: proposed method of producing powdered collagen material of food quality from mixed collagen-containing raw materials expands the range of products for obtaining a demanded product, allows to obtain a product with high technological properties.
