FIELD: food industry.
SUBSTANCE: present invention relates to food industry, in particular to food products based on fish collagen. Disclosed is a fish collagen-based food product, made in powder form, containing fish collagen hydrolysate, Malpighia glabra extract, Acacia gum, milled sublimated honeysuckle berries, silicon dioxide in the following ratio, wt.%: fish collagen hydrolysate 60–70; Malpighia glabra extract 1–3; sublimated honeysuckle berries 20–30; Acacia gum 4–14.8; silicon dioxide 0.1–0.5.
EFFECT: invention allows to improve organoleptic properties of a collagen-based food product.
