FIELD: food industry.

SUBSTANCE: invention relates to molded rice with fried outer surface and a method for production thereof. Disclosed is molded rice, which is a dish prepared by giving cooked rice a predetermined shape, including an inner and outer parts, wherein the inner part contains components or food materials without containing rice or cooked rice, wherein the outer part includes fried rice, a binder and components, wherein the binder contains at least one selected from the group consisting of starch, modified starch and adhesive grains, wherein the components included in the outer part have dimensions of 5 mm or more and are included in amount of 5 to 40 wt.% in terms of the total weight of the molded rice, strength of the outer surface of the molded rice is 200 g or more when measured with a texture analyzer, and the difference in moisture content between the outer part and the inner part of the outer surface is 3% or more. Also disclosed is a method for producing molded rice, which is a dish prepared by imparting a preset shape to cooked rice, comprising an inner and an outer part, involving: (a) preparation of fried components by mixing heated components and binder, or by mixing components and binder and heating mixture, wherein the binder contains at least one selected from the group consisting of starch, modified starch and adhesive grains, wherein the components included in the outer part have dimensions of 5 mm or more and are included in amount of 5 to 40 wt.% in terms of the total weight of the molded rice; (b) preparing an outer surface by mixing fried rice with fried ingredients; (c) introducing and molding the inner portion within the prepared outer surface, wherein the inner portion contains components or food materials without containing rice or cooked rice; (d) drying the molded rice with hot air; and (e) heat treatment of molded rice, dried with hot air, wherein the strength of the outer surface of the molded rice is 200 g or more when measured by a texture analyzer, and the difference in moisture content between the outer part and the inner part of the outer surface is 3% or more.

EFFECT: invention enables to obtain molded rice, which has a strong and crispy outer surface similar to fried rice, while remaining moist inside, it has especially excellent stability of molding due to preservation of the molded rice configuration even after molding and heat treatment.
