FIELD: biotechnology.

SUBSTANCE: disclosed is a method of producing a hybrid preparation of ficin and chitosan ascorbate in form of a thick solution, involving immobilization of ficin by complexation in thick solution of chitosan ascorbate in 0.05 M glycine buffer with pH 10.0 in ratio of 10 ml of ficin solution in concentration of 13 mg/ml, obtained by dissolving in buffer, per 1 g of chitosan ascorbate with a molecular weight of 350 kDa, previously dissolved in 10 ml of a buffer; subsequent incubation at room temperature for 2 hours with constant stirring at 250 rpm; washing the prepared preparation in the form of a thick solution by dialysis for 8 hours against 50 mM Tris-HCl buffer with pH 7.5, then the buffer is changed and dialysis is continued for 16 hours until there is no free ficin in the washing solution.

EFFECT: invention provides wider range of stabilized ficin preparations with increased content of ficin and with increased activity for use in food and chemical-pharmaceutical industry.
