SUBSTANCE: presented are a modified protein which contains an amino acid sequence containing one or more amino acid substitutions compared to a reference protein, wherein the modified protein is characterized by at least one improved food property as compared to the reference protein, and a food product containing the modified protein is also disclosed.
EFFECT: invention is used in food industry, in particular, as an agent for modifying taste-and-flavour properties or as an agent for enhancing taste-and-flavour properties.
