FIELD: food industry.
SUBSTANCE: disclosed is a method of producing protein bars, including preparation of raw materials, preparation of invert syrup in an open cooking pot with a steam jacket, into which water and white sugar are loaded, citric acid is added, and inversion is carried out to obtain invert syrup with dry substances weight fraction of 85–87 %. Obtained invert syrup and glucose-fructose syrup are mixed and cooked to produce a binder syrup. Obtained binder syrup and preliminarily prepared bioactivated flax seeds, blackcurrant refuses, cedar nut kernel cake and soya bean okara are mixed. Obtained mass is rolled into a bed, cut into portions and packed.
EFFECT: invention is aimed at development of a method for production of protein bars using soya bean okara, expansion of the range of confectionary products, reduction of prime cost and improvement of ready products quality.
