FIELD: food industry.
SUBSTANCE: invention relates to food industry and agriculture, namely to a method for production of a sublimated product with application of an electric field. Method of vacuum sublimation drying includes freezing of materials, supply of controlled intensity of heat and removal of condensate, and sublimation, wherein the sublimation process is carried out with simultaneous application of an external electric field, wherein a corona charge with an electric field strength in range of 600,000 to 2,000,000 V/m is used.
EFFECT: invention provides uniformity of mass transfer during sublimation and reduces duration of drying.
