FIELD: performing operations.
SUBSTANCE: invention relates to vacuum freeze drying and can be used in food and agricultural industries. Vacuum sublimation drying plant comprises a vacuum drying chamber, a steam condensation system, vacuum pump, a heat supply source, wherein the apparatus further comprises a system of electrodes connected to a high-voltage electric field source, which consists of a collector and an emitter, wherein collector used is baking pan for sublimated material while emitter is current conducting element. Product is placed in direct contact with collector while emitter is placed above pan for sublimated material.
EFFECT: increasing the efficiency of drying by ensuring uniform heating of the internal structure of the material, reducing the overall duration of vacuum-sublimation drying.
