FIELD: food industry.
SUBSTANCE: disclosed is a method of producing a fruit-and-berry product, including preliminary preparation of initial raw materials from fruits and/or berries, for implementation of which spoiled fragments of initial raw materials from fruits and/or berries are rejected, then the selected mass obtained from the initial raw material is preliminarily mixed and treated with water vapor and ground to a puree-like homogeneous mass or the ready puree-like mass of fruit and/or berry filler is used. Natural concentrated fruit and/or berry juice is added to the puree-like mass. Obtained mixture is stirred and cooked for 15–45 minutes. At the same time, not earlier than 5–15 minutes before the end of the mixture cooking, pectin and vegetal ingredients are added as a thickener, including mint, lemon balm, oregano and/or aromatic seasonings. Obtained mixture is cooled and packed.
EFFECT: invention is aimed at production of a product from natural components, without sugar addition, preservation of sufficient amount of natural properties and vitamins in the finished product.
