FIELD: food industry.
SUBSTANCE: invention relates to food industry and corresponds to the world trend in food production "Clean Label", the main requirement of which is availability of product known and understandable to a wide range of consumers of ingredients of natural origin, and can be used in dietary intake of all age groups of healthy population. Disclosed is a dessert sauce containing blueberries puree, lingonberry refuses, sugar sand, a citric acid acidity regulator with the following ratio of initial components, wt%: cowberry puree 46.16; granulated sugar 44.35; citric acid 0.29; cowberry pomaces 9.20.
EFFECT: invention allows to produce a dessert sauce solely from natural ingredients of vegetal origin, without adding food additives, as well as ensures reduction of the cost of the dessert sauce due to reduction of raw material costs, replacement of a part of cowberry puree with cowberry refuses and exclusion of pectin.
