SUBSTANCE: invention relates to coffee industry. Disclosed is a method of producing an instant coffee product, involving: performing a first aqueous extraction by bringing roasted and ground coffee beans into contact with soft water at temperature from 90 °C to 140 °C to obtain a first coffee extract and partially spent coffee beans and performing a second water extraction by bringing the partially spent coffee beans into contact with hard water at temperature of 175 °C to 205 °C to obtain a second coffee extract and spent coffee beans, combining the first and second coffee extracts to form a combined extract and concentrating, and optionally drying the combined extract to form a coffee product.
EFFECT: disclosed is a method of producing a coffee product.
