FIELD: food products.
SUBSTANCE: fish raw material is crushed without preliminary processing, liquid complex of proteolytic enzymes is added with relation of 1:0.5 to the crushed material weight. Autolysis of the obtained reaction mixture is carried out under the temperature of 55°C and pH 6.2±0.2 for 2-4 hours up to the proteolysis degree equal to 20-40%. Autolysis is finished by heating the reaction mixture up to the temperature of 80-90°C for 15-20 minutes to inactivate the enzymes. The mixture is cooled down and dried under the temperature of 50-60°C up to the residual moisture content of 14.0±2% with autolysate output of 20±5% of the reaction mixture weight.
EFFECT: more complete proteolysis of fish raw material, reducing amount of the reagents used, decreasing product cost.
