SUBSTANCE: invention relates to biotechnology, particularly to a method for stimulating lipolytic activity of bacteria Lactococcus lactis. Said method involves culturing a strain of bacteria Lactococcus lactis on a liquid nutrient medium MRS, separation of bacterial biomass by centrifugation, sterilization of supernatant, production of culture liquid, which is then added to mixture of olive oil and phosphate buffer, and adding to the obtained mixture a weighed portion of lithium succinate powder to obtain a solution concentration of 1.5-20 mmol/l.

EFFECT: present invention provides 1.1-1.3 times higher lipolytic activity of Lactococcus lactis bacteria.
